
Last year I made palappam, one of my favorite Kerala breakfasts as a treat for New Year’s Day. It is a bit labor intensive, and I haven’t made it since! I thought it would be nice to make it an annual tradition going forward. It’s fun to have the kids more involved in the process as they get older. Fun and messy, ha! I’ve written about this dish in previous posts, so I won’t go into detail here except to say that palappam goes deliciously with egg curry (regular or coconut), dark chickpea (kadala) curry, and even with meat curries like chicken or lamb. If making a meat curry, the coconut milk curries are best with palappam in my opinion! You can find my recipe for coconut curry chicken and kadala curry on the blog! I used The Familiar Kitchen’s recipe for palappam again, and it is perfection. The Vitamix or other strong blender is best to achieve the smooth batter. I will post a recipe for the coconut egg curry soon!
