I am a lifelong lover of oatmeal. Ever since I was a child, oatmeal was a frequent breakfast on cold early mornings before school. Over the years, I learned to make it just the way I like with loads of nutritious additions. I shared my recipe for Ultra Healthy Oatmeal previously. The thing about oatmeal is you can make the quick version in the microwave, or if you have some extra time, making it stovetop is always worthwhile. I got so used to making hot oats that I forgot for a long time about preparing it the night before and eating it cold in the form of overnight oats. Once I was reminded of this simple and quick breakfast idea, I started making it way more often. I even prepped four mason jars full of overnight oats a few months ago for a quick trip to the beach to ensure I would have a healthy and filling breakfast everyday. Overnight oats take mere minutes to prepare at night, and the feeling of grabbing a wholesome and nutritious breakfast makes a hectic morning rush about 5000% better.
Here are three recipes I make on repeat for overnight oats! The beauty of these recipes is that you can adjust whatever toppings/additions you prefer and it will definitely be delicious! You could also add protein powder of your choice to any of these to add a boost of protein if desired.
Cinnamon Blueberry Overnight Oats
- 1/2 cup quick rolled oats
- 1 cup milk – I use Califa Farms Toasted Almond & Coconut Milk, unsweetened. You could also use 1/2 cup milk and 1/2 cup water
- 1 tbsp chia seeds
- 1/2 cup frozen or fresh blueberries
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- Optional 1/2 tbsp maple syrup
Mango Coconut Overnight Oats
- 1/2 cup quick rolled oats
- 1 cup milk – I use Califa Farms Toasted Almond & Coconut Milk, unsweetened. You could also use 1/2 cup milk and 1/2 cup water
- 1 tbsp chia seeds
- 1/2 cup frozen mango chunks – I cut these into smaller pieces so I have smaller mango chunks in every bite.
- 1 tbsp shredded unsweetened coconut
- 1/2 tsp vanilla extract
- Optional 1/2 tbsp maple syrup
Cherry Garcia Overnight Oats (pictured)
- 1/2 cup quick rolled oats
- 1 cup milk – I use Califa Farms Toasted Almond & Coconut Milk, unsweetened. You could also use 1/2 cup milk and 1/2 cup water
- 1 tbsp chia seeds
- 1/2 cup frozen cherries
- 2 tbsp raw cacao powder
- 1/2 tsp vanilla extract
- Optional 1/2 tbsp maple syrup
Mix the oats, chia seeds, milk, vanilla extract, maple syrup, and any other dry ingredients (e.g. coconut, cacao powder) together in a mason jar or tupperware container. Add the remaining fruit/toppings and mix in. Store covered in the fridge overnight. Grab and go in the morning and thank your lucky stars you spent 5 minutes making this last night!
