Mon/Tues: Loaded taco baked potatoes (again!)
A fan favorite, this is a super easy go-to option for meal planning! You could customize by using ground turkey, ground chicken, or meatless crumbles. I use kale both in this recipe and for soup later in the week!
Wed/Thurs: Primal Gourmet Kale, Potato & Sausage Soup
This is one of our favorite soups that even the kids enjoy. It’s loaded with protein, fiber, and healthy fats, so it is so filling, not to mention delicious! We made a big batch which lasted the whole family a couple of days. The recipe is from The Primal Gourmet, one of my favorite resources for delicious paleo meals.
Fri: Fried Egg Sandwich
By Friday, we were running out of energy and groceries, so I opted for a breakfast-for-dinner option with an egg sandwich. The beauty of this is being able to customize it however you like! I personally love Dave’s Killer Bread and 2-3 over-easy eggs with a bit of cheese and ketchup. I also enjoy making sandwiches with boiled eggs sliced up or a nice homemade egg salad. Egg sandwiches are so simple and so customizable. The options for veggies, condiments, and seasonings are endless! If you’re a fan of avocado toast, adding eggs is a great way to get some protein into your meal. I love this idea!
