One of my favorite things about the fall season is the comfort of homemade soups! Especially on colder and rainier days like today, a warm bowl of delicious soup just makes things so much better. Moreover, I love homemade soups because they are quite simple, quick to make, and healthy. I’ve already made a number of soups in the last month, including today, so I wanted to share a few favorites I have made over the years!
*One tip I suggest for soups is to use a bullion cube instead of liquid stock. The cubes last much longer than store-bought stock, and they take up much less space. Of course, if you make your own stock from scratch, definitely use that!
I tried hard to find a photo of the soup I made, but it’s been several years since I’ve made it! It is vegan, paleo, and whole30. This soup is very hearty and comforting. I need to make this again ASAP now that I am reviewing the recipe!
I’ve made this soup countless times – including today! It’s a favorite of my husband’s which is great because it’s packed with healthy veggies. My oldest daughter calls this her “favorite soup.” I do prefer the sweet Italian sausage in this soup (which the recipe calls for) over hot Italian sausage, but you can substitute whatever you like!
If you love chicken pot pie, this soup is 100 times better! It is paleo because it’s made with coconut milk rather than regular dairy, but you can use whatever you prefer. I love the flavor of this soup! You can always pour it over a buttery biscuit if you feel the urge to get that pot pie feeling, but I love eating this soup as is.
I made this recipe purely to utilize French lentils in a recipe. I have seen French lentils in all kinds of recipes, and they always look so incredibly delicious. However, I could never find these lentils at my local grocery store! I finally happened upon them at World Market a few weekends ago, and I grabbed the bag immediately. I then found this recipe, which actually calls for Beluga lentils, but you can substitute French lentils. This stew was soooo incredibly hearty and felt decadent for a vegan recipe.
